Chef Lars Lundø from Denmark
Chef Lars Lundø was born in Billund, on the west coast of Denmark. Nowadays he showcases his talent as Head Chef at PONY in Copenhagen and at SommerPony on Bornholm island. He developed his culinary career in several renowned international restaurants such as El Celler de Can Roca*** in Girona (Spain) and COI** in San Francisco (USA) before moving to Copenhagen in 2005.
Lundø serves organic, Danish products and uses strictly seasonal produces, combined with extensive use of pickled and preserved ingredients from the summers at Bornholm island. The food is simple, but bold in flavours-filling, yet elegant and sophisticated.
